No-Bake Pineapple Delight

The kids have been planning a really nice Father’s Day for next Sunday and they’ve made a couple of requests of me and their mother for part of the food portion of the program. I’m going to take out one of those nice little 6 or 7 kg turkeys that I buy when they come on sale around the holidays and cook it up in my big electric roaster. It’s supposed to be a really nice warm weekend, so I don’t want to heat up the whole house and the kids have planned that we’ll be eating our meals outside picnic-style.

 

Most people don’t think of turkey unless its Christmas, Easter or Thanksgiving, but really it's really a very economical meal when you’re serving a larger number of people. Not only that, but everyone looks forward to my turkey soup that I make with the carcass afterwards. 

 

Anyway, I thought I would pick up some nice soft kaiser buns or some of those 9 grain triangle Ciabatta buns from Costco and we’d have turkey bunwiches for supper. I know that will really make Mac happy because he LOVES hot turkey bunwiches.

 

The kids have also put in a request for my No-Bake Pineapple Delight. I’ve been making this recipe for well over 40 years and it’s certainly a favourite of the whole family. It is wonderfully light-tasting and not too sweet, but I only make it for special occasions because made it’s made in an  8” X 8” pan and cut into 16 pieces  (2” X 2”), so each piece is close to 250 calories. I guess if you put it into perspective, it’s not much different than eating a chocolate bar, but we don’t indulge in those too often either.

 

NO-BAKE PINEAPPLE DELIGHT

 

2 1/2 cups graham wafer crumbs

2 eggs

1 1/2 cups icing sugar

1 cup drained crushed pineapple

1/2 cup melted butter

1/2 cup soft butter

1 cup whipping cream

 

Mix wafer crumbs with melted butter, keep 1/2 the crumbs for topping and put remainder in 8 X 8 pan, pressing down firmly.

 

Beat eggs, icing sugar and butter together and spread over crumbs.

 

Whip up cream and add crushed pineapple, and spread over above mixture.

Sprinkle the rest of the crumbs over the top. Garnish with maraschino cherries (optional) and refrigerate for several hours before serving.
