Favourite Baking Powder Biscuits

My family loves home-baked anything, but my baking powder biscuits are always a favourite. They are so easy to whip up for any meal as well. The ingredients throw together fast, and they bake up in just a few minutes. I’ve noticed one of the local coffee places now offers a choice of a breakfast sandwich made out of a baking powder biscuit instead of an english muffin. They can be a bit more crumbly, but they certainly are delicious. I usually make my biscuits smaller, but if you want to make them to serve as a breakfast sandwich, you can always make them larger and cook them a bit longer.

 

I remember when the kids were growing up, if I didn’t have enough bread to make toast, baking powder biscuits were always a welcome substitute at breakfast, or a great lunchtime addition to soup. If you need to stretch your supper out a bit to fit in one more person, a batch of biscuits will save the day!

 

My basic baking powder biscuit recipe is also flexible. Throw in some grated cheddar cheese and finely chopped onion into the dough and you have onion & cheese biscuits. If your milk happens to be sour, that’s ok too because your biscuits will turn out that much lighter and fluffier.

 

FAVOURITE BAKING
POWDER BISCUITS

 

4 cups of flour

2 tbsp baking powder

1 tsp salt

1 cup of softened butter 

1 3/4 cups of sweet or sour milk

 

 

Mix your flour, baking powder and salt together in a large bowl.

Using a fork, blend in your butter until you have coarse crumbles.

Add your milk, stirring until you have sticky dough.

 

On a floured surface, mix the dough with your hands until it feels smooth and  pliable. With a floured rolling pin, roll out the dough to a 3/4” thickness. Then with a small juice glass, cut out your biscuits and put on a cookie sheet. Gather up the scraps and roll out the left over dough again to cut more biscuits. Press the final scraps together to make a last biscuit.

 

Bake at 450F for about 15 minutes or until golden brown.

 

 

Variations:

 

Garlic - Add 1 tsp powdered garlic

Cheese - add 1 cup grated cheddar cheese

Onion - add 1/2 cup finely chopped onion

Sweet - add 1/8 cup sugar to dough and brush tops with milk, then sprinkle more sugar on top.
